Cinnamon Waffles with Strawberries


Things are a bit different around Joy of Jo these days. We added another baby to the mix and it has made everything a whole lot sweeter (and busier!) We are settled into a new city and job for the hubs (surely we are settled at 6 months in …) Life is chaotic, but joyful and, as always, food remains our gathering place.

These waffles have become a weekend favorite, particularly with the strawberry-obsessed toddler. The recipe from King Arthur Flour is nearly perfect; I just added cinnamon and topped the waffles with berries. We are a hearty breakfast loving family, so we find these waffles to be just enough for our little squad of eaters, but filling enough to carry you to lunchtime.

Cinnamon Waffles with Strawberries
Adapted from King Arthur Flour

1 1/2 c whole wheat flour
2 t baking powder
1/2 t salt
2 T sugar
2 t cinnamon
1 egg
1/3 c butter
1 1/2 c milk
1 pint fresh strawberries

Combine all dry ingredients in a mixing bowl. Add melted butter, egg, and milk and stir until the batter is smooth. Let sit for 5 minutes.

While your batter sits, preheat your waffle iron. Then, wash and slice the strawberries.

Cook the waffles to your desired crispness. We use the settings on our waffle iron but if your doesn’t have those settings, try 3-5 minutes per waffle.

Serve waffles with maple syrup and the sliced strawberries.

Makes approximately 7 8″ waffles.
