I stumbled on this dinner last summer when I was searching one of my favorite blogs for something new to try. Man oh man am I glad I found this meal. It has become my standby last minute meal as all of the ingredients are nearly always in my cabinet and, as such, I have come to think of it as comfort on a plate. You can do it up with homemade salsa and black beans seasoned to your liking or you can make it “semi-homemade” with a jar of salsa and a can of pre-seasoned black beans (Goya and Trader Joe’s have great options). Both are delicious in their own right, particularly when you pair it with a cold beer (or cider for my gluten-free friends). Enjoy!

4 6″ corn tortillas
1 batch homemade salsa (we love this one) or 1 jar of your favorite salsa
1 batch seasoned black beans (see below) or 1 can pre-seasoned black beans
Shredded cheese (cheddar, pepper jack, or the “Mexican blend” are our favorites)
1 diced avocado (optional)
Seasoned Black Beans
1 can no-salt added black beans in juices
1/2 yellow onion, finely diced
1/2 green bell pepper, finely diced
2 cloves garlic, minced
1 packet Sazón Goya with Azafrán
If you are seasoning your own black beans, using a small pan, sauté your onion, green pepper, and garlic in a small splash of olive oil. When your vegetables become tender, add the can of black beans and the packet of Sazón Goya. Bring to a boil and reduce heat to simmer. (If you are not seasoning your own black beans, simply dump your pre-seasoned can of beans in a pan to heat.)
Lightly spray a small non-stick skillet (we find an omelet pan works best) with cooking spray. Bring to medium heat and add one tortilla to your pan. When your tortilla is hot and slightly browned, flip it over. Sprinkle the browned size with cheese to your liking before cracking an egg over the top. Season with salt and pepper.
When the egg white starts to cook, flip your tortilla (with the egg and cheese still on it) over. It’s okay if things get messy, just recenter your tortilla over your egg and things will work our great.
Cook your egg to your desired done-ness (break the yolk if you so desire) and remove from pan. Top with black beans, salsa, cheese, cilantro and avocado to your liking and eat immediately.
Repeat with remaining tortillas/eggs.
Serves 2 with plenty of salsa leftover for chips.
