It has been unbearably cold this week. When the high doesn’t rise above freezing and there is no snow on the ground, thanks, but no thanks, I’d prefer something warmer (or a massive snow storm because at least that’s a novelty in this area of the country). Unfortunately, my lack of enthusiasm does little to actually change the weather, so instead, I usually end up baking something. After all, a warm oven is always welcome on a cold day and, who can say no to something sweet that is hot out of the oven?
These brownie bites are a quick and easy treat. I like to dust them with powdered sugar when serving them to friends, just because it makes them seem a little fancy (although for the amount of effort they are decidedly not fancy). I’ve also been known to enjoy these with a cup of coffee or tea as if they were muffins. After all, they are cooked in a muffin tin and aren’t most muffins cake in disguise anyway?
Nutella Fudge Brownie Bites
Adapted from Heather Green of Garland of Grace
1 cup Nutella
1/2 cup flour
1/2 cup whole wheat flour
1/2 cup mini chocolate chips
Whisk together Nutella and eggs until smooth. Add flours and stir until just combined. Fold in mini chocolate chips.
Grease mini muffin pan and then scoop batter into pan. Evenly divide batter in pan to create 2 dozen mini muffin brownie bites.
Bake at 350° for 8-9 minutes. Serve hot or allow to cool completely before storing in airtight container. Dust with powdered sugar when serving.
Makes 24 brownie bites.
